Why different ingredients have different cup weights

A cup is a volume measurement (236.6 mL in the US), but every ingredient has a different density. 100 grams of flour is not the same volume as 100 grams of sugar or butter — that's why an ingredient-specific converter gives you more accurate, consistent results than a single fixed “1 cup = X grams” rule.

Frequently asked questions

Why not just use "1 cup = 120g" for everything?

Because it's only true for a handful of ingredients. A cup of honey, a cup of oats, and a cup of flour all weigh different amounts — using one fixed number for every ingredient is the single biggest source of baking measurement errors.

How accurate are these conversions?

Our figures are standard, widely-published baking references (King Arthur Baking, USDA FoodData Central), typically accurate within about ±10%. For ingredients where precision really matters, weighing on a kitchen scale is always more accurate than converting from cups.

What's the difference between a US cup, a US legal cup, and a metric cup?

They're all close but not identical: a US customary cup is 236.588 mL, a US legal cup (used on nutrition labels) is 240 mL, and a metric cup (used in Australia and some other countries) is 250 mL. Pick the standard your recipe is written for in the converter's cup-standard dropdown.
